Ingredients:
– 8 ounces (about 2 cups) elbow macaroni or any pasta of your choice
– 2 tablespoons butter
– 2 tablespoons all-purpose flour
– 2 cups whole milk
– 8 ounces Gouda cheese, shredded
– 4 ounces sharp cheddar cheese, shredded
– Salt and pepper to taste
– 1/4 teaspoon paprika (optional)
– 1/4 cup breadcrumbs (optional)
– Chopped parsley for garnish (optional)
1. Preheat your oven to 375°F (190°C). Grease a baking dish and set aside.
2. Cook the macaroni according to the package instructions until al dente. Drain and set aside.
3. In a large saucepan, melt the butter over medium heat. Once melted, add the flour and whisk continuously for about 1-2 minutes to make a roux.
4. Slowly pour in the milk while whisking constantly to avoid lumps. Cook the mixture, stirring frequently, until it thickens and coats the back of a spoon, about 5-7 minutes.
5. Reduce the heat to low and gradually add the shredded Gouda and cheddar cheese to the sauce, stirring until melted and smooth.
6. Season the cheese sauce with salt, pepper, and paprika to taste. Adjust the seasoning according to your preference.
7. Add the cooked macaroni to the cheese sauce and stir until well combined, ensuring all the macaroni is coated with the cheese sauce.
8. Transfer the mac and cheese mixture to the prepared baking dish, spreading it out evenly.
9. If desired, sprinkle breadcrumbs over the top of the mac and cheese for a crunchy topping.
10. Bake in the preheated oven for 20-25 minutes or until the top is golden brown and the cheese is bubbly.
11. Once done, remove the mac and cheese from the oven and let it cool for a few minutes before serving.
